If you make your own nut milks this is a recipe to use it up
1.5 cups of raw nuts gives you 2 cups of nut milk after draining. It is a very moist loaf
Ingredients
2 cups of nut pulp- I used coconut and almond pulp
2 ripe, mashed bananas
2 eggs
2 tbsp honey- you might like a little less, just taste your mix
1/4 cup of coconut oil
1 tsp baking powder
1 tsp vanilla extract
Pinch of salt
Method
Mix it all in a bowl put in your loaf tin and bake at 180 c for approx 30 minutes until it springs back and is golden brown. Leave in the tin when cooked for ½ an hour as it is a very moist loaf it firms up more when it cools. You could ice with chocolate icing if you wanted. You can bake as muffins, round/square cake too; you would have to adjust your cooking times though.
