Orange balsamic green beans with walnuts

 

 

This dish is a low calorie side to any main meal. It would work best with chicken, turkey or fish. A source of vitamin C from the oranges and green beans and omega 3s from the walnuts make this a tasty and nutritious dish for any occasion.

 

Gluten, dairy and soy free.

 

200g green beans, trimmed

½ a large orange, plus the zest

1 tbsp balsamic vinegar*

2 tsp crushed garlic

2 tbsp olive oil

¼ cup crushed walnuts or pine nuts *

Sea salt and cracked pepper

 

Method

 

Blanch the green beans in a pot of boiling water until just cooked, about 4-5 minutes.

In a small pan over medium heat, add the oil, garlic and nuts. Cook for 1 minute, until the nuts are slightly toasted. Be careful not to burn. Set aside.

In a medium bowl, combine the vinegar, sea salt, pepper and orange zest. Loosely cut the orange from the skin. Cut into segments. Add the juice from the remaining orange on the skin to the vinegar mix.

In a medium bowl, toss the beans, vinegar mix and nuts together. Fold in the orange segments and serve warm.
